Cooking with Surplus…CFINE’s Homemade Pizza

Cooking with surplus food takes creativity and resourcefulness but this weeks recipe shows that it can also be a lot of fun. We have been working with Honest Crust to uncover our FareShare community chefs’ favourite surplus recipes in celebration of the launch of Honest Crust’s surplus Christmas sandwiches.

This weeks chef is Liz Boynton, a volunteer at CFINE in Aberdeen. Liz runs cooking classes at her local centre using FareShare’s food to create healthy meals that go a long way. Liz’s Homemade Pizza is a firm favourite with people of all ages including her own grandchildren.

Liz encourages people to take her recipe into their own hands, using whatever fresh ingredients you have available to make your own masterpiece. Choose your toppings wisely - peppers, mushrooms, chicken and sausage all make amazing additions or keep it simple with a cheese and tomato margherita.

Homemade Pizza

Ingredients:

1 cup self raising flour
1 cup Greek yoghurt
25 g cheese
1/2 onion
1 tomato
Tomato purée
And any other toppings you want!

Method

  1. Mix the flour and yoghurt together until combined.
  2. Grease a baking sheet, place the dough onto baking sheets and press out the dough with a floured hand (fairly thinly).
  3. Lightly spread tomato purée onto dough (use the back of a spoon).
  4. Top with thinly sliced onion and tomato and finely grated cheese.
  5. Bake for about 30 mins 180c
  6. Once golden brown remove from oven and leave to cool for a few minutes before removing from tray.

Liz’s top tip: I sometimes add a little grated cheese to the dough and shape into balls to create homemade rolls.
