Cooking with surplus…Gino’s Minestrone Soup

This week we’ve got a hearty and nutritious minestrone soup recipe from Chef Gino Mastropirro of Olallo Services SJG. We hope it will help keep you warm this winter...

Gino is the second FareShare community chef to serve up a recipe as part of our Cooking with Surplus project in collaboration with Honest Crust. This project comes after the launch of Honest Crusts limited edition Christmas sandwiches, also created by FareShare community chefs from surplus ingredients. Our aim is to showcase some of the amazing dishes that can be created with surplus food and inspire you to come up with some creative creations of your own.

Gino is a chef at Olallo Services SJG, based in Euston. The charity provides accommodation, food, medical support, banking support and lots of other services to homeless people in need. A common trait among FareShare’s network of community chefs is the ability to make the most of an ever changing set of ingredients, and Gino is no exception.

Here’s Gino’s Minestrone Soup…

Minestrone (Mixed Veg Soup)
Ingredients:
1 onion
1 clove garlic
1 carrot
2 sticks of celery
1 courgette
1 large potato
1 can beans
200 gr chopped fresh tomatoes
1 large handful of greens (savoy cabbage, chard, green beans etc.)
1 litre vegetable stock
Salt and pepper
Olive oil
Oregano
Parmesan cheese
Anyway any veg will do!
Serves 4

Method:

Peel and trim all the veg and chop them (diced).
Use a large pot put some olive oil and start to saute' onion, garlic and carrots.
Add all the remaining vegetables.
Add the veg stock, salt, pepper and oregano.
Cover and simmer for 20-25 minutes.
Add some more water if needed.
Gino’s top tip: Serve with some parmesan cheese on top for extra flavour!
