Courgette and Mint Soup


Ingredients

2 courgettes

2 shallots finely sliced

1 clove of garlic, crushed

50g butter

2-3 sprigs of mint

Handful of spinach

Seasoning to taste

Serves 4

Method

  1. Peel the courgettes but do not throw away the green skin.
  2. Melt the butter in a pan then add the finely chopped courgette, shallot, garlic and rosemary.
  3. Cover with water and cook for 5 minutes.
  4. Add the green courgette skin, mint and spinach and blend thoroughly.
  5. Season and serve
