BBQ Bacon Breakfast Hash


Ingredients

  • 1 Can Bacon in BBQ Stock
  • 300g Cooked Potatoes (from a can or fresh)
  • 1 Onion Chopped / Spring Onions
  • 2 Eggs
  • ¼ Tsp Smoked Paprika
  • ½ Tsp Garlic Powder
  • 1 Tsp Dried Mixed Herbs
  • Salt & Pepper
  • Fresh Herbs (Optional)

Method

  1. Open can and empty contents into a saucepan, heat until you can start to shred the meat.
  2. Add garlic powder, smoked paprika and mixed herbs and slowly simmer. Once hot, taste and add seasoning if required.
  3. Half or quarter your cooked potatoes, place in an airfryer with your chopped onions and a few sprays of cooking oil. Cook on 170 for 10 minutes.
  4. While cooking your potatoes, fry your eggs using a little oil.
  5. Place potatoes and onions on a plate, top with shredded Bacon in BBQ Stock and your eggs. Sprinkle with fresh or dried herbs and maybe a bit of mayonnaise.
