Celeriac Soup

Preparation time: 10 minutes

Cooking time: 20 minutes


Ingredients

1 small whole celeriac, peeled and diced

1 litre full fat whole milk

2 tablespoons cream or crème fraiche

60g butter

Salt and pepper, to taste

Serves 4 | Prep time 10 minutes | Cooking time 20 minutes

Method

  1. Place all the ingredients, apart from the salt and pepper, into a saucepan.
  2. Bring to the boil, then reduce the heat and simmer for 20 minutes, or until the celeriac is soft.
  3. Allow to cool slightly, then transfer to a blender or food processor and blend until smooth.
  4. Season to taste with salt and pepper and serve.
