Irish Potato Soup

Preparation time: 10 minutes

Cooking time: 30 minutes


Ingredients

700g Potatoes (peeled & cubed)

1 x Knob Unsalted Butter

1 x Onion (peeled & finely sliced)

2 x Celery stalks (washed & chopped)

1 x Clove garlic (peeled & sliced)

1 x Veg stock cube

750ml Boiling water

150ml Milk

Salt & Pepper

Try the following optional toppings, smoked bacon, flat leaf parsley, croutons or Irish Cheddar cheese.

Serve 4

Method

  1. Start by putting a large saucepan on medium heat with the butter.
  2. Add the onion & celery and cook until the onions are translucent.
  3. Add in the potatoes & give everything a stir. Pour in the stock & season with the salt & pepper.
  4. Bring everything to the boil, pop a lid on & then turn to a simmer. Simmer gently for around 20 minutes until the potatoes are soft.
  5. Pour in the milk & bring back to the boil. Remove from the heat & carefully blend the soup.
  6. Correct the seasoning if needed.
  7. Serve in warm bowls alongside crusty buttered bread & your choice of toppings.
