Isabel’s Blueberry Banana Bread
Preparation time: 20 minutes
Cooking time: 45 minutes
Ingredients
3 ripe bananas
1 pack of blueberries (fresh or frozen)
¾ cup caster sugar
1 cup self raising flour
½ cup vegetable oil
1 tsp baking powder
3 eggs
Isabel’s top tip: Keep a cupboard full of spices/herbs/seasonings so you can easily add flavour and excitement, google an ingredient if you are unsure what to do – loads of recipes and flavour combinations will come up, freeze things you don’t need now, you can freeze pretty much anything, and wilting vegetables into a soup or stew or curry, and ripe fruit into a smoothie. A particular favourite of ours/the young people is to bake excess fruit or vegetables into a cake!
Method
- Pre-heat oven to 180℃.
- Grease a cake tin with butter or oil
- Pour the dry ingredients into the mixing bowl and mix together.
- Mash the banana in another bowl and whisk in the eggs.
- Pour this mixture into the dry ingredients, add the oil and mix in. Add all the blueberries and mix together.
- Pour mixture into cake tin.
- Bake in the oven for 45 minutes.
- To check if the cake is cooked, insert a skewer/knife into the middle of the cake. If it comes out clean, the cake is ready.
